Blend Origin Story

Delta Spirit was created to be a true utility coffee, versatile enough to move comfortably between filter, espresso, and milk-based beverages without sacrificing character in any of those preparations. Rather than designing the blend around a single brewing method, we begin with the experience we want in the cup: deep sweetness, generous tactile, red fruit, and enough structure to remain expressive across a wide range of extractions.

The roast approach follows that same philosophy. We push Delta Spirit toward the height of caramelization and Maillard development, where sugars become richest and the coffee takes on greater depth and weight, but stop well before the roast begins to obscure the coffee itself. The goal is to find the point where sweetness, juiciness, and texture are at their fullest, without introducing heavy, oily, or carbonized flavors. Every production batch is cupped and evaluated to ensure it remains on that line.

At it's core, Delta Spirit is an expression of the broader Doyenne sourcing philosophy. Every coffee used in the blend is sourced from women producers or women-led projects. Women remain significantly underrepresented in many parts of the coffee supply chain despite the enormous role they play in coffee production, and Doyenne was created to build more intentional, stable partnerships around that work. Through the program, we seek coffees that meet an uncompromising quality standard while also directing purchasing toward producers and organizations where women have meaningful ownership and leadership. The blend is sourced seasonally from producing countries including Peru, Honduras, Colombia, Rwanda, and Ethiopia. We are not committed to any one origin or combination of origins; instead, we source for the specific sensory attributes that define Delta Spirit. As harvests change throughout the year, components transition with them. Each new coffee is evaluated through extensive sample roasting, blending, test batches, and cupping before entering production.

In that way, Delta Spirit represents much of what we believe specialty coffee can look like at scale: exceptional coffees, thoughtfully roasted and rigorously evaluated, made accessible in a format that works almost anywhere. Through Doyenne, that everyday versatility is paired with a sourcing program centered entirely around women producers and women-led projects—bringing those coffees to a wider audience while building lasting partnerships throughout the supply chain.
