Heritage Decaf was built around a simple idea: decaffeinated coffee should feel every bit as intentional as the rest of our coffee program. Rather than treating decaf as a secondary offering, we approach it with the same focus on sweetness, structure, sourcing, and consistency that guides every coffee we roast. The goal is a cup that feels complete, balanced enough for everyday drinking, expressive enough to stand on its own, and versatile across both filter and espresso.

We begin with high-quality coffees selected for their inherent sweetness and structure, knowing that decaffeination changes the way a coffee responds during roasting. Heritage is processed using a water-based decaffeination method, allowing us to remove caffeine while preserving as much of the coffee’s original character as possible. From there, the work shifts to the roastery, where we develop the coffee to a medium degree that emphasizes caramelized sweetness, body, and balance without allowing roast character to overwhelm the cup.

That roast profile sits intentionally between our lighter and more developed offerings. We want enough development to create warmth, texture, and familiarity, while maintaining the clarity and sweetness that distinguish specialty coffee. The result is a profile centered around soft chocolate, caramelized sugars, and rounded fruit, with a clean finish and enough structure to perform equally well on its own or with milk. As with the rest of our coffee program, consistency is maintained through careful production roasting, color measurement, and sensory evaluation. We cup regularly to make sure Heritage continues to hit the same balance of sweetness, development, and clarity from batch to batch.

We roast to tight tolerances, with no more than 1° deviation from target temperatures. During the roast, we keep an especially close eye on rate of rise (RoR)- or the rate at which the bean temperature is increasing.
